March dinners 2017

Week One

White Bean Chicken Chili

Baked-Orange Glazed Meatballs- double this next time

*Slow Cooker Red Beans and Rice- super quick weeknight meal

*White Chicken Lasagna Soup- the cheesy topping puts this soup over the top

*Yum Yum Bowls- 5 Stars! It was very similar to mexican pile-up but with the addition of an awesome 5 star sauce

Week Two

*Dan Dan Noodles

*Cheesy Black Bean Lasagna- kinda like a mexican lasagna

Pot Roast Meat over Baked Potatoes

Dino-nuggets when mom's gone

Romaine Salad with Cheddar, Chicken, Apples and Cranberries

Week Three

A HUGE thanks to my friend Angela who helped me process and prep a TON of food while she was visiting this week. It made dinners this week so smooth!

Beef and Barley Garden Stew - a great use-whatever-random-veggies-I-can-find recipes. Start with sautéing ground beef and chopped onions, add some garlic, throw in a bunch of chopped tomatoes or a couple cans of undrained diced tomatoes, then finish with some broth and whatever chopped veggies sound good to you. Season to taste. I also added about 1/2 cup of barley to make the finished product thick and more stew-like. This pot included potatoes, zucchini and mushrooms.

Breakfast for dinner- Blueberry Oatmeal Yogurt Pancakes and smoothies

Asparagus Pesto

Week Four

Roasted Lemon Butter Garlic Shrimp and Asparagus

Mexican Zucchini Soup- yes, it uses Valveeta cheese but it is oh so yummy!

Bacon, Asparagus pizza

Dumpling Soup- there is never a drop of this soup left when we make it.
