November Meal Swap with Angela

Angela and I did another meal swap which I LOOOOOOVE. It's so fun to try some of her families favorites and add new awesome recipes into our rotation. And I love having a week off from meal planning!

Cast-Iron Skillet Calzone- Like a giant pizza in a pot. This was our second favorite!

Steak and Potato Arugula Salad- The homemade dressing over the hot potatoes and steak...mmmm. This salad recipe would impress any "steak and potatoes" type of person!

Steak Meat Pie- AMAZING!!! 5 stars!!! Quite a bit of effort required so make it on the weekend with help but this will probably be my favorite recipe of the year!

Cauliflower Mac-N-Cheese- I loved this easy week night meal

Baked Cheesy Gnocchi- Super simple and kid friendly


Ravioli Lasagna with Baby Kale and Italian Sausage

1 5-to-6 oz package kale, coarsely chopped
12 oz. Italian-flavor cooked chicken sausage, chopped
1 ½ cups mozzarella cheese
½ cup snipped fresh basil (I used dried - probably 1 Tbsp?)
1 28-oz. Can crushed tomatoes
1 14.5 oz. can fire-roasted diced tomatoes with garlic, undrained
1 8 oz. can tomato sauce
1 tsp dried Italian seasoning
2 9-oz. Packages refrigerated cheese-filled ravioli

Preheat oven to 375F.  Grease 9x13 baking dish.  In a large bowl, combine kale, sausage, half of cheese, and the basil.  For sauce, in another large bowl, combine rest of ingredients besides ravioli.

Spread 1 cup of sauce in prepared dish.  Top with half of the ravioli and kale mixture.  Spoon another 1 cup of the sauce over kale mixture.  Top with remaining ravioli, kale mixture, and sauce.  Sprinkle with remaining cheese.

Cover with foil.  Bake 30 minutes.  Remove foil, bake 25 minutes more or until heated through.  


Upside-Down Waffle and Egg Cups I couldn't find mini waffles so I cut up large eggos into fourths

12 frozen mini waffles, toasted
2 cups shredded cheddar cheese
1 9-to-10 oz. package frozen cooked breakfast sausage links, thawed and chopped
6 eggs, lightly beaten
3 Tbsp milk
2 Tbsp grated Parmesan cheese
½ tsp black pepper
¼ tsp salt
Maple syrup

Preheat oven to 375F.  Grease muffin cups (I didn’t use the silicone muffin cups you gave me because the waffles wouldn’t fit).  Place mini waffles in prepared muffin cups.  Sprinkle with 1 cup of the cheddar cheese.  Top with sausage and remaining 1 cup cheddar cheese.  

In a medium bowl combine next five ingredients (through salt).  Spoon over filling in muffin cups.

Bake 15 to 18 minutes or until set and golden brown.  Cool in muffin cups on a wire rack 5 to 10 minutes.  Remove.  Serve drizzled with maple syrup.

July Meals 2016


Week one:

Grilled Chili-Lime Fajita Salad

African Chicken Peanut Stew



Dinner out at Uncle Peteza's

Roasted Veggie Pizza:

1. Make dough. (1.5 tsp yeast, 1tsp sugar, 1c warm water, 2.5 c flour, 2Tbsp oil, 1 tsp salt)
2. Saute 1 sliced zucchini, 1/2 red bell pepper, 1/2 yellow bell pepper, and 1/2 red onion. (You can use whatever kind of peppers you want. I think it's good with all of them.)
3. Season vegetables with 1 tsp oregano, 1 tsp salt, 1/2 tsp pepper, and 1 tsp garlic powder (or you can saute a couple of cloves).
4. Sprinkle 1.5c of mozzarella cheese on pizza crust and cover with sliced tomatoes.
5. Spread veggies on top of tomatoes (it will be pretty thick!).
6. If you like feta and basil, sprinkle with both.
7. Bake at 425 for 20-25 minutes.

Panera Copycat Broccoli Cheese Soup (recommended by Kristi)- no leftovers on this one!

Tomatillo Braised Chicken Thighs (recommended by Heidi)- I was able to find a roasted tomatillo sauce in the fresh deli section of Trader Joes and skip a few steps. The chicken was so tender!

Sweet Potato Burrito smothered in Avocado Sauce (recommended by Amy)- 5 stars! I think it was my favorite thing I've eaten this year

Thai Beef with Basil (recommended by Jentry)- we served this to company and it was a total hit

Darn Good Ham and Cheese Sliders (recommended by Tara)- we definitely should have doubled (or tripled) this one!

Pioneer Woman's Hamburgers (recommended by Nisha)- Yum! Mark was so excited about this meal

I made a call out on facebook for some tried and true recipes and my friends did not disappoint! These were all delicious!!!

Mexican Molletes (Recommended by Angela)- make the homemade bread- it's worth it!

Balsamic Pork Tenderloin (Recommended by Beth)- I only marinaded for about an hour and it was so juicy!

Korean Beef Bowl (Recommended by Amanda)- a perfect tasty, quick weeknight meal

Beef stew (Recommended by Laura)- crazy good in a bread bowl!

Spicy Honey Chicken Thighs (Recommended by Michele)- I've been afraid of thighs in the past (too many bones, fat, etc but these changed my mind. SO much flavor!!

African Peanut Stew (Recommended by Maran)- My kids hated it but Mark and I both loved it!

Week of February 14th, 2016

For Valentines Day: Red Velvet Waffles, heart shaped pizzas and Fondue

Rotisserie chicken, carrots and berries- this week I bought the $12 pack of already pulled and shredded chicken from Costco. Their chickens have the best flavor and I was able to (easily) use it for three meals (see below). I loved the dded flavor it gave to meals and the ease of not having to remember to thaw and cook the chicken prior to a meal. I will be doing this again!

One pot creamy garlic noodles- Even without a lot of butter or heavy cream it was nice a creamy

Pesto Chicken Pillows- This seemed like it would be a complicated meal but with the chicken already cooked, it was a breeze to put together. A fun meal to serve to company!

Jalapeno Popper Chicken Taquitos- So yummy!

Top 10 recipes of 2015

Chili Verde Mexican Stewed Pork- tender, flavorful and incredibly versatile. We ate this as tacos and quesadillas but also could be used as burritos, enchiladas, etc


Pot Pie Crumble- very easy, easily doubles for a crowd, kids loved it- homerun!


Philly Cheesesteak Calzone- there's no explanation needed on why this was awesome- the name says it all


Korean Beef and Rice- next time I will have to double this because it was gobbled up with no leftovers to spare!


Crockpot Carmelized Pork Ramen Noodle Soup with Curry Roasted Acorn Squash- this is definitely my favorite recipe of the year. Our friends the Laramas made it for us first and then we borrowed some small amounts of some of the rarer ingredients to make it ourselves. It seriously is amazing! And such a fun meal to share with friends and family. All the ingredients can be found in a grocery store with a good asian section. Central Market for sure. If you want a show-stopper for company, this is your recipe!


Homemade refried beans- the secret ingredient makes these refried beans stand out among the others


Honey lime enchiladas- sweet and spicy, easily freezable and oh so tasty!


Honey Chipotle Chicken Bowls- I loved the different flavors and textures in each bite. The kids loved being able to pick what they put in their bowl :)


Chicken and Vegetable Dumpling Soup- this soup was so popular I made it again two nights after I made it the first time. Yum!

Apple Squash Bacon Pizza- a recipe from Angela that was PERFECT for the fall and loved by every member of the Heaviland clan

Meals in January

December was a month of holiday parties, neighbors bringing cookies over daily, gallons of egg nog from Costco, seasonal peppermint JoJos from Trader Joes, etc. Needless to say, Mark and I were ready for healthy start to 2016. I saw this two week 2015 clean eating plan from buzzfeed life on pinterest. It caught my eye because the photos were excellent and it looked like recipes I could enjoy. We started it at the beginning of the month and Mark and I both lost 7 pounds in the two weeks. We liked it so much that we continued on with their two week 2014 clean eating menu. And after that we'll be starting February with their one week 2016 clean eating menu. All menus are free to download and include shopping lists and detailed recipe instructions. We are feeling great and hoping to continue making healthy choices throughout the year. Perhaps that means chocolate malts every night are off the menu...

Meals in December

For meals in December we used this 15 meals for $150 Winco Meal Plan. Between family dinners, holiday parties, leftover nights, etc this meal plan pretty much covered our whole month. I loved how the shopping list was printable and it gave you brand AND size so I knew exactly what to grab off the shelf. I still had to supplement our month with fruits, veggie sides, dairy and bread for our breakfasts and lunches but our overall grocery budget was much lower than usual! My favorite meals from the plan were sausage with potatoes and broccoli, taco bake and salami/spinach strombolis. You have to buy the meal plan for $4 but it was well worth it. I wish she had more menus!
