Week of June 22, 2015

*Ham, Spinach and Sun-Dried Tomato Calzones- doubled and froze a second batch

*Epicurean Chicken Salad- VERY interesting/weird combination of flavors but I liked it!

*Chicken Taco Casserole- Thank you Jane for the simple delicious recipe!
15 oz can tomato sauce
1/4 c water or broth
package taco seasoning
chili powder to taste
cooked, shredded chicken (2 breasts)
1 can black beans, rinsed and drained
1/4 c sour cream
shredded mexican cheese
1 8.5 oz Jiffy corn bread mix

Mix all, then top with jiffy. Bake at 350 for 30-35min
