Week of November 30th, 2015

Angela and I had one of our menu swaps this week which is always such an awesomely fun thing- to pick for the other friend and to eat recipes that are hand-picked deliciousness!

Apple Squash Bacon Pizza- Mark's favorite and definitely 5 stars!

Lemon Chicken with Leeks and Croutons- The kids thought the lemon flavor was a bit too much. Perhaps I shouldn't have squeezed the cooked lemons over the dish after it was cooked...

Chicken Avocado Taquito- You can always count me in for taquitos and these were sooooo easy

Couscous Chicken Salad- Next time you make food for a shower or ladies night, make this! I promise you will be asked for the recipe. This was my favorite

Potato Cream Cheese Soup- Similar to the other baked potato soup I have on the blog but the addition of dill and the fun toppings made this a hit with all of us

Maple Bourbon Crockpot Chicken- The adventure of taking 4 kids under 3 (we had a little friend with us) to the liquor store to buy bourbon was worth it for this recipe. My crockpot dried the chicken out a little bit but with the addition of the apple broccoli slaw and the delicious flavors, this was still a 4+ star recipe.

Week of October 19th, 2015

Best Baked Manicotti- This uses no-bake lasagna sheets instead of manicotti shells. Easier than stuffing the shells, but still a time-consuming meal to make

Chili Verde- We served this for company and we all went back for seconds. Perfect to throw into the crockpot on high before church and having friends over for lunch!

Crispy Southwest Chicken Wraps- perfect meal to wrap up for a picnic in a corn maze!

Queso Turkey Burgers- yep these were reeeeeeeeeeeeally good

My favorite fall salad at my sister's

Kale pesto pizza
1 lb. refrigerated pizza dough (TJs dough is always awesome!)
1 t olive oil
1/8 t sea salt
1 (8 oz) package sliced fresh mozzarella
2 medium tomatoes, thinly sliced
4-6 fresh basil leaves

For the Kale pesto:
1.5 c chopped Kale
1/2 c raw almonds
1 to 2 cloves
1/4 t sea salt
juice from 1/2 lemon
3T extra virgin olive oil
(process until smooth)

Preheat oven to 400 degrees. Get pizza dough to room temperature (about 20 minutes on counter). Roll out dough to a flat circle or oval. Place the dough on a parchment lined baking sheet. Brush with olive oil and sprinkle with sea salt.
Spread the pesto sauce evenly on the pizza, leave a border for the crust. Top with the mozzarella and tomato slices. Bake for 20-25 minutes.
Remove from the oven and top with the fresh basil and more sea salt, if desired.

*Baked penne with Chicken, Broccoli and smoked mozzarella- a hit with the kids and felt fancy with the smoked mozz

Asian Noodle Salad- I had almost forgotten about this gem of a salad. So good!

*Sweet potato burritos- super easy to throw together for a beach picnic

Southwestern Cobb Salad- an AMAZING salad that only takes 345645 dishes and 345 hours to prepare. Please only make this salad if you have help in the kitchen but be prepared to wow some company

*Ham, Spinach and Sun-Dried Tomato Calzones- doubled and froze a second batch

*Epicurean Chicken Salad- VERY interesting/weird combination of flavors but I liked it!

*Chicken Taco Casserole- Thank you Jane for the simple delicious recipe!
15 oz can tomato sauce
1/4 c water or broth
package taco seasoning
chili powder to taste
cooked, shredded chicken (2 breasts)
1 can black beans, rinsed and drained
1/4 c sour cream
shredded mexican cheese
1 8.5 oz Jiffy corn bread mix

Mix all, then top with jiffy. Bake at 350 for 30-35min

Week of June 8th, 2015

Thank you friends for the recipes for doubling and freezing. My freezer is starting to get full of these delicious recipes!

*Chiles Relleno Casserole- I accidentally bought diced green chilis but it still turned out great. Mark loved this!

*Spicy Pork Tacos- This pork was so ridiculously good. It knocked off my favorite Dr. Pepper pork down to second place. I bought a huge 14 pound shoulder from Costco and split it and put half in the freezer for another time. This was so good that 3 days later I was thawing the second half so I could make it again for family.

*Layered BBQ Chicken and sweet potato enchilada- I roasted the sweet potatoes in olive oil prior to adding them to the casserole. I doubled it and brought the second half to a gluten free momma.

*Homemade Refried Beans- These are insane. My friend Josie is an amazing cook (think Pioneer Woman) and she is right that the addition of bacon grease and jalapeno juice puts these beans at a whole new level.

I am getting tired of never having enough food for my always hungry family. So you will notice a lot of casseroles on the menu this week. (Besides the crispy black bean tacos which I have been craving for weeks)

Week of March 9th, 2015

*Barbacoa Pork Tacos- James LOVES barbacoa from Chipotle so I tried this one out for him. I was actually nervous that it wouldn't live up to Chipotle and be a disappointment. But it was AWESOME with a capital A. Everyone loved it and we will make it again soon. 5 stars

*Roasted Cauliflower and White Cheddar Soup- as I expected, everyone in the family hated it but I enjoyed it

*Cajun Shrimp Tacos- Another bomb this week because it was way too spicy for the kids. Mark and I loved them but the meal was tainted by all the desperate pleas for MORE MILK

*Creamy Chicken and Quinoa Cordon Bleu- this is a casserole that was VERY easy to throw together and got rave reviews from the company we served it to. My kids affectionately referred to it as, "Mom- I like this mush!" I tried out the homemade cream of chicken soup recipe to use in it and will definitely use that again.

*Pesto and Sausage Baked Ziti- great for a large family. We actually had leftovers!

*Thai style fish and Creamy Couscous Packets- I loved this make-ahead meal. We used Mahi-Mahi from TJs

*Basil Chicken in Coconut Curry Sauce- a very mild curry sauce and delicious with naan

*Stuffed Zucchini Enchilada Boats- I used ground turkey in this and would love to repeat it this summer if we can grow any zucchini in our first attempt at a garden (odds are nothing will grow with my track record of keeping plants alive)

Honey chipotle Chicken Bowls- We just had this the other week but I had to repeat for my mother-in-laws visit because I knew she would love it

Crockpot Chicken with Black Beans- a 5 star oldie but goodie. We brought this in a ziplock bag and our crockpot to the Great Wolf Lodge for a delicious home-cooked inexpensive dinner.

Week of December 29th, 2014

*One Pot Mexican Skillet Pasta- This was AWESOME. Every family should make this :)

Copy Cat Orange Chicken- Mark picked this week of recipes and I have to admit I wasn't excited about this recipe. I couldn't remember it and it didn't sound that great. But then we made it. And I remembered why I originally rated it 5 stars. SOOOO yummy.

Wet Burritos- A Mark menu wouldn't be complete without something beany and cheesy

Baked Potato Soup- Don't make this without doubling or tripling. You will not have enough. It's that good.

Balsalmic Grilled Chicken Salad- We did salad bar with the kids this night and I put out a ton of toppings in little bowls- carrots, snap peas, tomatoes, corn, sunflower seeds, chow mein noodles, etc. I thought it would be funny to put mini marshmallows out as a joke. The kids did not know it was a joke and when I told them I was just being silly and they couldn't actually put them on their salad, my oldest child started crying. Joke Fail.
