*Avgolemeno Soup- the flavor was simple and it was a cinch to put together but there are a bunch of soups I'd make before this one
Out to eat for Ethiopian at Enat- sooooooo good! I'm proud of my mother-in-law for trying out such an adventurous cuisine with us!
*Couscous Bowls- I loved the ease of this recipe! Fun for a group of people. We also put TJ's balsamic glaze on top.
*Blueberry Salsa Chicken- yum! (We left out the grilled scallions) Thanks for the recipe Melanie!
Snacks
*Pumpkin and Oatmeal No-Bake Cookies (found Dulche de Leche at Walmart)
*Snickerdoodle Bread- AMAZING!!!!! 5 Stars!
Breakfast
Coconut Bircher (another Melanie recipe)
2.5 Cups of organic rolled outs
2 c. coconut milk (or cream)
3/4 c flaked coconut
1/4 cup of creamed honey
2 tbsp. of sesame seeds
4 pinches of cinnamon
Comebine all ingredients and let stand overnight in the fridge.
In the morning, sprinkle 1 tbsp. of flaked coconut and 1 tbsp. of sesame seeds over the top of the bircher
