Thai Salad


Emilie's mom gave me this recipe:

Dressing:
6 T. rice wine vinegar
6 T. canola oil
5 T. creamy peanut butter (I used crunchy)
3 T lite soy sauce
3 T brown sugar
2 T minced garlic
1 t ground ginger

Mix and Toss with:

1 bag shredded green cabbage
1/2 bag shredded red cabbage
1/2 bag shredded carrots
1 bell pepper (any color)
4 large green onions, chopped
1/3 c. cilantro
1/2 c. chopped cucumber
